Late Night Date Night

Sometimes finding a sitter for Dexter isn't easy. Yet Josh and I NEED to have just 'us' time. When we can't make it work with a sitter we do late night date night. We don't start dinner till Dex goes to bed at 8 pm and have the night to eat without having to worry about Dexter having enough of the highchair. It's relaxing and inexpensive and low maintenance. All things I LOVE. Speaking of LOVE Valentine's Day is coming up in less than a month. That's usually one of the hardest times to find babysitters. How about staying in this year and saving a few bucks? Today I have Julie over here from The Chirping Moms to share with you a DELICIOUS recipe you can use for your special someone!

I have the perfect Valentine's recipe for you.  Most of our Valentine's Day dinners now that we have kids have been spent here at home enjoying a nice home-cooked dinner and dessert after the kids go to bed!  No worry about finding a babysitter and scrambling to find dinner reservations.  This is one of my ALL time favorite recipes, found in the cookbook that my mom created for all of us.  This would be a perfect dessert to whip up for a special Valentine's dinner, it's SOOO delicious and trust me, easy!!!

Brownie Pudding

  • 1 cup flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 3/4 cup sugar
  • 2 tbsp. cocoa
  • 1/2 cup evaporated milk
  • 1 tsp vanilla
  • 2 tbsp. melted butter
  • 1 cup chopped pecans
  • 3/4 cup brown sugar
  • 1/4 cup cocoa
  • 1 3/4 cup hot water

1.  Preheat oven for 350 degrees.
2.  Combine flour, baking powder, salt, sugar, and 2 tbsp. of cocoa.
2.  Add evaporated milk, vanilla, and melted butter.  Mix until smooth.
3.  Add pecans and pour into greased 8 inch cake pan (I often use a 8 inch pyrex bowl).
4.  Mix brown sugar and 1/4 cup cocoa.  Sprinkle over batter.
5.  Pour hot water over batter.
6.  Bake at 350 degrees for 40-45 minutes.

I often serve it warm with some ice cream on top (but it's good anyway it comes out of the dish).  It's so SUPER delicious!!!!!!

And make sure  to head over to The Chirping Moms all week long---lots of Valentine related posts, great giveaways, and more just for you!!!!!!!

  2. I love the LNDN idea! It would be great for us even though we are still a childfree family. Come home after work, freshen up and head out for a late movie or quick bite, but I really love staying in! Your blog is adorable, thanks for sharing!
